Butterfly Tea & T
By now you are already familiar with the magical attributes of the Butterfly Pea Flower. While generally tasteless, the flowers are dried and made into tea. When brewed, turn into a dark blue hue - turns out letting it steep in room temperature gin does the same thing. The cool part about it is that anything acidic turns the liquid’s hue from a deep blue into a bright pink-ish purple. I had a lot of fun playing around with this one - feel free to get creative and try it for yourself!

1½ oz Butterfly Pea Tea-infused Gin
½ oz St. George Spirits Spiced Pear Liqueur
5 Drops Crude Bitters Lavender Bitters
1 oz Jack Rudy Cocktail Co. Tonic Water
½ oz Fresh Lime Juice
Dehydrated Lime Wheel
instructions:
Combine infused gin and spiced pear liqueur in a shaking tin with ice. Shake for 5-10 seconds. Double strain and pour into a collins glass over a solid piece of ice. Stir while pouring the mixture of tonic water and lime juice. Garnish with a dehydrated lime wheel (if desired).
