Another labor of love 🌽🇵🇭

You know what they say about corn… it has the juice. This is an homage to one of my favorite Filipino street desserts, maís con yelo. I developed this recipe for a Kamayan dinner with my friends at @kulturacharleston, @kaya.orlando and @naks.nyc for @chswineandfood this year. It turned out to be one of my favorite cocktails I’ve ever made just because it brought me back to my childhood in the Philippines.

Winter Julep

A julep in December? Yes please.

Together with my friends at @vineyardvines, we’re making a drink before we head to a holiday party. Who says a julep is only a spring cocktail, this one combines the traditional with some winter elements to make a fun, refreshing and seasonal variation on a classic.

We’re getting a little dressed up for this one too, so make sure to stay till the end to see how I can transform this casual/cozy combination to something that is a bit more elevated and easy to pull off.

Mom's Flowers

Your mom deserves her flowers (and wine, mostly wine).

Today we’re doing wine cocktails with my friends at @bonterra. Wine cocktails may seem redundant but it’s actually a great way to enjoy a lower-ABV cocktail experience (in moderation, obviously). This recipe is no exception, to celebrate spring and #MothersDay, this recipe uses Bonterra’s Sauvignon Blanc, which is carefully made with certified organic grapes. Think of this recipe as a cross between a Spritz and a Pimms Cup. Its finished with edible flowers to compliment the wine and fresh fruit in the cocktail.

Ok, so I’ll admit I was a big btparsons fan before, but I had the honor of taking his Amaro class at BenConCHS and was completely blown away. Luckily, Charleston, SC was a stop on his ‘Amaro’ book tour and I had the opportunity to pick his brain (again) at @edmundsoast while he was in town. He was knowledgeable, down-to-earth and one of the coolest authors I’ve had the honor of meeting. Ube Daiquiri

Another Filipino-inspired recipe for your feed 🇵🇭

Daiquiris have a special place in my heart, but not as much as the flavors of ube and calamansi. These two ingredients are staples in Filipino culture. When I was growing up in the Philippines, the go-to citrus wasn’t lemon or lime, it was calamansi. If you havent had it before, think of it as a cross between an orange, kumquat, and lime. Heavily citrusy with a sour back-end. Together with an Agricole from my friends at @highwirechs and a funky Jamaican rum from @hampdenestaterum - this recipe was a winner. Leche Flan ni Nanay Old Fashioned

An ode to my Filipino grandmother (Nanay) 🥃🇵🇭

You know when you try a particular food or drink it just takes you back to place and time in your life or childhood? This is it for me. This recipe’s flavors reminds me of my Nanay (Tagalog for ‘mom’ - she was everyone’s mom) and her famous leche flan. She would make this recipe for every special occasion and it was always a crowd favorite. What set it apart was the incredible amount of balance in flavors, between the massive amount of lime zest in the condensed milk custard (think souped up key lime) and a caramel sauce that was just brought past caramelization, bringing a sweet, but nutty element to table. I’m honored to be able to create something to pay homage to those flavor profiles and the nostalgia that comes along with it.

I’ve been covering the chswineandfood going on seven years, but this year but I knew this year was special when I was asked to be a participant for a signature dinner with my friends at @pinkbellies and the world famous @pawkhrua. I knew this had to make on the menu along with some other recipes that I can’t wait to show y’all.
