Ok, so I’ll admit I was a big btparsons fan before, but I had the honor of taking his Amaro class at BenConCHS and was completely blown away. Luckily, Charleston, SC was a stop on his ‘Amaro’ book tour and I had the opportunity to pick his brain (again) at @edmundsoast while he was in town. He was knowledgeable, down-to-earth and one of the coolest authors I’ve had the honor of meeting. On the last episode of #HandcraftAfterDark, I asked y’all for some suggestions on what I should make next and I happily obliged on one of the submissions from my friend Jean-Félix (@jfdesfosses) of @trufflesontherocks. This recipe is dark, moody, complex and of course, delicious. I’m so glad this was suggested. It was an honor to be able to make this one and hope y’all give it a try too!

Read MoreIt’s like an Irish Coffee, but not.🍀☕️ This enhanced version of the classic is still very easy to make and only takes a few more ingredients to execute. Chicory and coffee have always been a match made in heaven but together with an eight year old Irish Whisky like thequietmanwhiskey it just brings it to a whole other level. The notes of sweet vanilla and oak that is imparted from the barrel is on full display in this version of Irish coffee, only to be accentuated with a salted caramel foam to balance out the bitterness from the coffee.

An ode to my Filipino grandmother (Nanay) 🥃🇵🇭
You know when you try a particular food or drink it just takes you back to place and time in your life or childhood? This is it for me. This recipe’s flavors reminds me of my Nanay (Tagalog for ‘mom’ - she was everyone’s mom) and her famous leche flan. She would make this recipe for every special occasion and it was always a crowd favorite. What set it apart was the incredible amount of balance in flavors, between the massive amount of lime zest in the condensed milk custard (think souped up key lime) and a caramel sauce that was just brought past caramelization, bringing a sweet, but nutty element to table. I’m honored to be able to create something to pay homage to those flavor profiles and the nostalgia that comes along with it.
I’ve been covering the chswineandfood going on seven years, but this year but I knew this year was special when I was asked to be a participant for a signature dinner with my friends at @pinkbellies and the world famous @pawkhrua. I knew this had to make on the menu along with some other recipes that I can’t wait to show y’all. We, I created a variation on an Old Fashioned that will be an instant hit this season. It combines the familiar pairing of apples and cinnamon and combines them with the rich and complex notes of the 94 proof #ElijahCraig Small Batch bourbon, providing for one of the easiest sipping cocktails you’ll make this this season.
If you’re unfamiliar with Old Fashioned Week, it’s an annual celebration of this classic Bourbon cocktail, featuring events in bars and online. As an added bonus, the funds raised for this campaign will be donated to a great cause: the Southern Smoke Foundation
The ultimate nightcap doesn’t exi……This recipe combines the base formula for an Old Fashioned combined with flavors inspired by sleepy-time tea, which contains a blend of herbs that include chamomile and lemongrass. I further enhanced that flavor with honey and ginger to create the ultimate simple syrup perfect for #BedTime.

A little backstory on this one, I received a unique ingredient from my friends at stgeorgespirits - an Umeshu liqueur. Traditionally Umeshu is created by steeping Japanese plums in shochu and sugar and it produces a fruity, sweet and slightly tart flavor that is just perfect for sipping or in a cocktail. Now, this bottle is discontinued so I’ve been savoring every last drop.
I wanted to make a recipe that would be as unique as the liqueur and had the idea to pair Saint George’s Baller Single Malt with a sweet soy syrup (this is more sweet with a touch of savory from soy), the cocktail is brightened up with a bit of calamansi just to round out the flavors, creating a drink that is a little sweet, fruity, savory with a hint of citrus tartness. I wish I could say this would be easy to recreate as I realize these ingredients are not something very common in one’s pantry, but if you get a chance, try this out one out.

TIKI-inspired Boulevardier? Yep.
Together with coopercraft, my good buddy Jordan aka @highproofpreacher and myself have teamed up to create two takes on a Boulevardier. Both recipes will be using similar ingredients in pineapple and sherry but they will be vastly different in flavor and texture but very similar in that they’re both absolutely delicious.
This is my take on a tiki-inspired cross between a Boulevardier and a Jungle Bird. This recipe is both SHAKEN and STIRRED. The initial base is a Boulevardier-riff that combines Oloroso sherry and the 100-proof coopercraft Barrel Reserve to provide something familiar but not overly sweet to compliment the topping (think Garibaldi). This orgeat, salted-pineapple foam is literally the icing on the cake. This topping is shaken to showcase the pineapple’s natural ability to foam when aerated (shaken) providing for light and fluffy top and a strong, complementary base to match. You NEED to make this recipe this week and make sure to head on over to @highproofpreacher to check out his coffee/pineapple riff!

Y’all know alllll about the Espresso Martini, well what if we combined that with one of the classics in a rye Manhattan, well this is that cocktail and with the addition of salted caramel syrup. this one is absolutely delicious.
