Thanks to our good friends over at queencitycocktails, we've been doing a bit of tinkering with our @anovaculinary sous vide cooker. On the docket tonight is a homemade sage, ginger, blackberry and black pepper shrub. Daiquiris have a special place in my heart, but not as much as the flavors of ube and calamansi. These two ingredients are staples in Filipino culture. When I was growing up in the Philippines, the go-to citrus wasn’t lemon or lime, it was calamansi. If you havent had it before, think of it as a cross between an orange, kumquat, and lime. Heavily citrusy with a sour back-end. Together with an Agricole from my friends at @highwirechs and a funky Jamaican rum from @hampdenestaterum - this recipe was a winner. My friends over at whistlepigwhiskey sent over a kit of rye waffle mix, their barrel aged maple syrup and their Piggyback Rye, complete with a waffle maker! To be quite honest, I can’t think of anything better to pair with waffles than their ridiculously good maple syrup, aged in their own whiskey barrels. But it got me thinking, how can we incorporate all of the above into a cocktail. Well… the answer is below.
If you’ve never had a “flip” style cocktail - don’t be scared, it uses a WHOLE egg instead of just egg whites to create a rich, velvety texture to the drink (think egg nog), while providing a creamy, frothy head to accentuate the flavors in the cocktail - this one is no exception. The maple syrup plays beautifully with the rye whiskey and rye waffle in this. The egg just adds that extra layer for rich texture making for your new favorite breakfast cocktail.
Habañero x Paloma x Margarita = ?
Introducing a fiery twist on two classic cocktails, the Paloma and the Spicy Margarita. This original recipe combines the refreshing citrus notes of a Paloma with the heat of a Spicy Margarita to create a unique drink for your summer cocktail arsenal. If you haven’t heard already it’s #BatangaWeek and we’re all here for it.
Cocktails don’t have to be hard and this is no exception. When we were in Mexico last week with @drinkcazcanes, we all fell in love with this drink. The ingredients are simple: tequila, lime and [Mexican] @cocacola. You might be saying, “well Miguel, thats just a tequila-coke…” - it’s not until you add the salt on the rim and IN the glass will this drink just shine. The salt accentuates everything in the cocktail from the agave to the herbal [almost amaro-like] flavors from the soda. If you haven’t had this yet, you need to. I can almost guarantee you already have all the ingredients.

This recipe takes me back to the Philippines, the traditional pairing of coconut (or “buko” in Tagalog) and pandan (a sweet herb with notes of vanilla) are a match made in heaven for desserts. I remember my Lola (grandma) would make a non-alcoholic version using fresh coconuts, condensed milk and pandan jelly. This is my take on that as an elevated non-alcoholic drink.

Mangos are near and dear to my heart just because it was so ubiquitous in the Philippines and I had it almost every day as a child. Whether it was fresh off a tree, or sliced unripened with a side of shrimp paste; I loved it in all its forms. I figured it was only fitting to make a non-alcoholic drink and pair it with Spindrift’s Mango Black Tea. It’s fruity, light and refreshing - hope you give this one a try! Cheers y’all!
